Dry-packed (not wet-packed) — no soaking, zero preservatives
Many scallops on the market are soaked to retain extra moisture and extend shelf life. That’s what can cause the milky foam in the pan and make it harder to get a real crust.
Dry-packed scallops don’t do that—they stay sweet, clean, and sear hard.

Sushi-grade quality / handling

Sold in 1 lb increments (10/20 count) — a perfect dinner for two.

To avoid preservatives and lock in peak quality, these scallops are shucked and frozen quickly on the boat, then handled cold through packing and overnight shipping. They arrive ready to cook or prepare for sushi—sweet, clean, and perfect for a hard sear.

Quick sear guide: pat very dry → ripping-hot pan → sear 2–3 min on the first side (until deep golden and they release) → flip and sear 1–2 min to finish.
